Overview

High in the Andalusian hills near Ronda, La Donaira sits within a 1,700-acre private estate shaped by land, livestock and open landscape. Designed as a working farm as much as a place to stay, it offers just nine rooms within a restored cortijo, creating a strong sense of space and quiet. Much of what you experience here comes directly from the land — from food grown on the farm to wellness shaped by its rhythms. Days move between time outdoors, simple rituals and the stillness of the hills.

LAND
Working estate

The estate stretches across rolling hills, vineyards and olive groves, with wild terrain that shifts between open pasture, rocky outcrops and wooded slopes. Walking the grounds, you pass vegetable gardens, grazing animals and beehives, with wide skies and long views across the Andalusian hills. It’s a landscape that feels both cultivated and untamed.

EXPERIENCES
Out into the land

Experiences are centred on connection with the land, with many taking you out into the landscape. Time with the horses is one part of this — whether riding, observing or working with them — but the focus is broader, from guided walks exploring wildlife and conservation to visits through the medicinal garden and farm. It’s as much about understanding the estate as it is about moving through it.

WELLBEING
Land and breath

Wellness at La Donaira is part of daily life, shaped by the setting. Yoga and movement sessions take place outdoors, looking out across the valley, with quieter practices like breathwork and sound sessions using Tibetan singing bowls. The spa moves through heat, water and cold — steam bath, wood-fired sauna, ice plunge and an indoor-outdoor pool — with views always open to the hills. Treatments focus on massage and restoration, often using ingredients grown on the estate.

TABLE
From the estate

Cuisine is shaped by the estate’s biodynamic approach, led by Michelin-starred chef Fredrik Andersson. Vegetables are harvested daily, with olive oil, dairy and wine produced on site. Meals are served as a set menu, guided by what’s been gathered from the land that day, with a focus on simple, ingredient-led cooking. There’s no printed menu — each course is introduced as it arrives, often alongside natural wines from the estate or like-minded producers.

DESIGN
Restored cortijo

The hotel is set within a restored Andalusian cortijo, with thick stone walls, whitewashed surfaces and terracotta floors reflecting its agricultural past. The renovation follows a natural approach, using clay, lime and wood sourced from the estate and surrounding area. Interiors combine this with contemporary elements — large windows, simple forms and carefully chosen pieces — creating spaces that feel both grounded and open. Books, music and artwork add quiet detail throughout.

Sleep
Rooms & Suites

Each of the nine rooms has its own character, with windows opening to hills, gardens or sky. Interiors combine natural materials — wood, stone and adobe — with antiques and original artwork adding character. Thick walls keep rooms cool in summer and hold warmth in cooler months, while nights remain deeply quiet.
