Overview

Set in the countryside outside Sigüenza, Molino de Alcuneza is a boutique family-run hotel built around a beautifully restored 15th-century flour mill. The Moreno family have brought new life to the old stone buildings, gardens and original milling machinery, creating a warm country retreat with Michelin-starred food at its heart. Days unfold between walks through the Castilian countryside, the outdoor pool and small spa, while Samuel Moreno’s cooking draws deeply on the grains, produce and culinary traditions of the region. It is a wonderfully grounded place to eat well, breathe out and settle into rural Spain.

    Heritage
    The mill still turns

The Moreno family rescued the abandoned mill in the early 1990s, restoring its stone walls, timber structure and traditional clay floors before eventually bringing the historic milling machinery back into use. Today, grain passes through the mill once again, giving the building’s original purpose a place in everyday life.

    Table
    From grain to table

Samuel Moreno’s Michelin-starred cooking is rooted in the landscape around Sigüenza, drawing on vegetables from the garden alongside local game, wild mushrooms and produce from trusted farmers and artisans. Bread has a special place, with several varieties made each day from organic and heritage grains such as Negrillo and einkorn. The cooking is refined, but its flavours remain unmistakably Castilian, giving you a delicious sense of where you are.

    Place
    Guardians of the land

The hotel’s connection to the countryside reaches far beyond its own garden. Samuel and Blanca Moreno work closely with a network they call the Guardians of the Land: farmers and artisans preserving local grains, honey, salt, saffron, olive oil, cheese and other traditions of rural Castilla. Their stories find their way onto the table, giving you a sense of a landscape tended by people who care deeply about its future.

    SLEEP
    Rooms & Suites

The seventeen rooms carry the surrounding landscape indoors through stone, timber, linen and ceramics, with earthy colours inspired by wheat as it changes through the seasons. Some rooms sit within the original mill and others around the gardens and pool. The atmosphere is warm and unfussy, with countryside views and plenty of space to settle in.
