Overview

High in the Serranía de Ronda, long, dry summers ask much of the Andalusian landscape, yet with careful tending, there is abundance everywhere. Ancient oak woodland gives way to olive and almond groves, vineyards and pockets of cultivated green. At La Donaria, generations of farming tradition meet a relentless curiosity about how to care for the land sustainably. On this estate-hosted journey, you’ll spend time with growers, chefs and beekeepers who tend this remarkable finca, getting your own hands in the soil and discovering the satisfaction that comes from helping something flourish.

Start your journey
Grow
From the ground up

Head across the finca with one of La Donaira’s growers, following dusty tracks between gardens, orchards and groves. Tomatoes and aubergines ripen among flowers planted to keep pests naturally at bay, while hens scratch beneath fruit trees and Andalusian donkeys and native Pajuna cattle graze nearby. Taste what’s ripe, gather whatever is ready and experience a landscape humming with life.

Listen
Inside the world of bees

La Donaira’s bee bed offers an extraordinary way into the world of the hive. Learn about the bees and their role across the estate, before lying safely above the colony. Gradually, the experience becomes almost meditative: the warmth of the hive, the scent of honey and propolis, the murmur of thousands of wings and their gentle vibration beneath you.

Cook
From today’s harvest

In La Donaira’s kitchen, the starting point isn’t what you want to cook, but what the land has given you to cook with. Alongside one of the estate’s chefs, turn tomatoes, peppers, herbs, estate olive oil and whatever else was ready that morning into dishes rooted in the flavours of Andalucía. Chop, taste and cook together before sitting down to enjoy the lunch you’ve created.

Heal
The living pharmacy

More than 350 species of medicinal and edible plants form La Donaira’s living pharmacy. Move among them with one of the estate’s experts, crushing fragrant leaves between your fingers and releasing the oils of rosemary, lavender and lesser-known botanicals used in infusions, lotions and balms. Then blend natural ingredients you’ve gathered to make a beautifully scented botanical soap of your own.

Ferment
Alive with goodness

In La Donaira's kitchen, make one of the world's oldest fermented drinks. Learn how to read, feed and care for kombucha as it slowly transforms, tasting along the way and discovering the simple alchemy of fermentation. At the end, take a culture home with you, alive and ready to brew —something small to keep tending long after you've left Andalucía.

Taste
The bouquet of the land

In the cool of La Donaira’s bodega, clay amphoras sit alongside barrels while the Andalusian hills rise beyond. With the estate sommelier, explore scent and flavour through wines shaped by high-altitude vineyards and Mediterranean and Atlantic winds. Discover an adventurous side of Andalusian winemaking, where orange wines, ancestral techniques and lesser-known varieties bring new ideas to old traditions.

Gather
Estate to table

As the day’s heat slips from the Serranía, gather on the terrace for a final evening together. Course by course, the landscape finds its way onto the table: vegetables picked at their peak, fragrant herbs, estate olive oil and honey, accompanied by natural Andalusian wines. Over dessert, the chef pulls up a chair as conversation drifts to the gardens, growers and ideas behind each dish, while the last light fades across the mountains.

Reflect
What we nurture

Warm soil between your fingers. Bees humming. Rosemary crushed in your palm. Sun-ripened tomatoes appearing on the table. There is something hopeful about tending a demanding landscape. You tend, wait, learn and try again, until something flourishes. Perhaps that’s why time close to the land feels so nourishing: what we care for has a remarkable way of sustaining us in return.

Where you'll stay
Andalusian estate

La Donaira is an intimate retreat within a beautifully restored 111-year-old Andalusian cortijo. Individually designed rooms and suites layer natural stone and wood with rare antiques, original art and handwoven rugs. Copper baths, custom fireplaces and fine Portuguese linens add warmth, while botanical soaps are made with plants from the medicinal gardens. Everything feels considered, individual and deeply connected to the land.
